Maple Pancake Bites

Early mornings with a hot cup of coffee . . . and a handful of these Maple Pancake Bites.  It's like having a short stack you can carry with you.  Take them to work for a great coffee break.

How about Thanksgiving morning when everyone is getting up to coffee, tea, or hot chocolate . . . Bake a batch of these, or heat up a batch you prepared the night before, for a tasty morning treat before the day's "main event".

Ingredient List

1.5 Cups Carbalose flour
2.25 teaspoons Baking Powder
0.25 teaspoon Salt
1.0 Cup Splenda Sweetener
4.5 Tablespoons REAL Chilled Butter
0.66 Cup

Splenda Sweet Cream Creamer
Water can be substituted if you desire even fewer grams of carbohydrates

1.0 teaspoon Butter Extract
0.5 teaspoon Maple Extract

Process Steps

  1. Preheat oven to 450°F
  2. In a large bowl put 1.5 Cups Carbalose flour
  3. Add 1 Cup Splenda Sweetener and stir well with a fork
  4. Add 2.25 teaspoons Baking Powder, 0.25 teaspoon Salt, and stir well with the fork
  5. Add 1.0 teaspoon Butter Extract and 0.5 teaspoon Maple Extract to 0.66 (2/3) Cup Splenda Sweet Cream Creamer (or water) and stir well with the fork
  6. Make a "well" in the dry ingredients and pour the Extract/Creamer blend in
  7. Stirring from the outside in with the fork, mix the ingredients until "grainy"
  8. Once all the ingredients are in the dough, use a grater and grate the 4.5 Tablespoons of chilled butter into the dough, turning the dough with the fork about half way through the butter.
  9. Once all butter is grated into the dough, use the fork and mix until is is "marbled"
  10. Using a 1 teaspoon baller or round measure, scoop 1 teaspoon of the dough and place on parchment paper - if you prefer "cookies", press a fork down onto the ball, lift off, rotate 90°, and press lightly again to form a "cookie"-shape with a cross-hatch pattern on top.
  11. Place parchment paper onto a cookie sheet or on a baking stone and bake at 450°F for 8 minutes - more than 8 minutes and the cookies will brown too much.  If you're just cooking "ball" bites, bake at 9 to 10 minutes depending on your oven.
  12. Remove and cool on a rack
